New Mexican Grill Planned for Lexington Avenue Strip Mall

Plans for the Fiesta Cancun Mexican Restaurant sailed through both the Planning Commission and Eagan City Council.

Let the party begin.

A new joint serving up fare from south of the border will soon take root in Lexington Center, a strip mall just south of Diffley Road. The bar and grill, known as Fiesta Cancun Mexican Restaurant, will occupy a 4,100 square foot space at the south end of the center, which also includes a Subway, Rosa Nails, Pizza 'N Pasta and Fitness 19. 

The owners put the proposal before the Eagan City Council on July 2. It was voted in unanimously, with not discussion.

The Eagan restaurant appears to be a twin to another grill, which recently opened in Brooklyn Park. According to the Sun Post, an entity known as Fiesta Cancun Bar and Grill opened in the northern suburb in early June, to much acclaim. At the time, owners Elena Ruelas and her husband, Angel, were already pursuing a second Twin Cities location in Eagan.
