Noodles, Yogurt Lab Coming to Cliff Road Development

The new restaurants will open later this spring at 2000 Rahncliff Road, according to a local developer.

A new sandwich shop and hair stylist have already opened at a new commercial development along Cliff Road in Eagan—and two more restaurants are on their way, according to a local developer.

Noodles & Company plans to open its second location in Eagan at 2000 Rahncliff Rd. in April, according to Noodles representative Melanie Bagley. Noodles' arrival will likely be followed by the opening of a Yogurt Lab, Oppidan Vice President of Development Paul Tucci told the Eagan City Council on Tuesday.

Last year, Oppidan unveiled plans to demolish a vacant gas station on the 2.8-acre property and build a 7,150-square-foot multi-tenant commercial building with outdoor dining. Already this winter, a new Sport Clips hair stylist and Which Wich sandwich restaurant have set shop in the new building, which is owned by Oppidan.

Tucci was back before the council on Tuesday night seeking approval for an expansion to the outdoor patio dining areas, which will be split between Noodles, Which Wich and other tenants, according to documents submitted to the city. The developer also received approval for expanded signage and several modifications to the original building plan. Although the building was designed to house five tenants, Noodles will occupy two of the tenant stalls at the west end of the building.

Noodles' other location in Eagan is located along Town Centre Drive in central Eagan.

Despite a lengthy discussion regarding the size and design of Noodles' signage on the building, council members were generally supportive of the development.

"It’s such an improvement on that corner. Well done," Eagan Mayor Mike Maguire said during the meeting.

Tucci hopes the new development may breathe new life into that segment of Cliff Road's commercial corridor. While Oppidan also purchased the adjacent commercial condominium housing Rudy's Automotive, they have no immediate plans to redevelop that storefront, Tucci said on Wednesday.

"It’s a partial fresh start,” Tucci said. "We fixed the west half of the site and gave it new life, and now we want to see the tenants capitalize on a new building setting."
