Wildcats Changes Menu, Commits to Wildcats

New Eagan restaurant dishes up food, drinks and school spirit.

Wildcats Bar and Grill, which opened on December 13, 2010, will be rolling out a new menu on June 6 featuring family recipes, including lamb shanks, lamb and chicken kabobs, and moussaka, in addition to traditional pub fare like burgers, sandwiches, and steaks.

Wildcats is named after the Eagan High School mascot and features pull tabs and bingo to benefit the EHS hockey association. Owner George Damah also provides food for the school's benefit breakfasts at a greatly reduced price.

In addition, two dollars from the sale of the restaurant's signature one-pound Pit burger is donated to the high school.

Dahmah has wanted to open a restaurant of his own for a long time. Growing up in Syria, he worked in his father's restaurant and has been in the restaurant business since immigrating to the United States in 1991, most recently working for his new business partner, Randy Cooper of , also in Eagan.

When the opportunity arose to take over the lease from the retiring owners of Steakbones in the Yankee Square Shopping Center, Dahmah decided to take a chance while he was still young enough to have the energy for such an undertaking, regardless of the shaky state of the economy.

So far, he says, business is meeting his projections.

Dahmah wants "to know (his) customers and have them know me," and he does everything he can to make sure the food is good enough to keep the customers coming back.

One such returning customer is Eagan resident Barb Jones. Jones, a pharmaceutical company representative, regularly purchases gyros and salads from Wildcats for client meetings. Jones says her clients rave about the food and ask where it came from so they can have it again sometime.

Dahmah is still tweaking his happy hour menu and is aiming to start serving breakfasts on the weekends.
