Eagan Yogurt Lab Now Open on Cliff Road

Business owner Aaron Switz says the company focuses on healthy, high-end ingredients and yogurt.

Andrea Switz and her husband, Aaron, had just returned to Minnesota following a trip, when they had a sudden craving for frozen yogurt. Not just any fro-yo would suffice, she said. They'd enjoyed sampling the offerings of several self-serve frozen yogurt places on the west coast, where customers pick from a variety of flavors and toppings to create their own unique dessert. The problem, according to Switz, was that the experience they were looking for simply didn't exist in Minnesota. "We tried a few others, but didn't feel it tasted like the ones we saw out west," she said. Rather than curse the food gods for overlooking their home state, Switz said they decided it was time to follow their guts and go into business for themselves. The …

Public Comments Wanted on Proposed Parkview Redevelopment

The public is invited to comment on an amended environmental assessment through March 20, 2013.

As part of the proposed residential project, developer Hunter Emerson would convert Parkview Golf Course along Cliff Road in Eagan to a 177-unit housing development. Hunter Emerson's controversial plans have been stringently opposed by a neighborhood group, which believes the Dakota Path development would negatively impact quality of life for adjacent neighborhoods. Earlier this month, the Dakota County Platting Commission reviewed the impact of the proposed project on Cliff Road. …

Two Teens In Custody After Cliff Road Robbery

Emily Kay Schuster and Jesus Alexandro Ybarra, both 19, were allegedly part of a cadre that robbed a restaurant on Cliff Road and threatened an employee with a stun gun.

Emily Kay Schuster, a 19-year-old from Lakeville, is charged with making terroristic threats and simple robbery, both felonies. St. Paul resident Jesus Alexandro Ybarra, 19, has been charged with aggravated robbery in the first degree. At about 9:45 p.m. on Monday, Jan. 21, the Burnsville Police Department was dispatched to a restaurant on Cliff Road due to a robbery report. One Injured in Accident Involving Bicycle on Cliff Road

The bicyclist was transported to Regions Hospital with leg injuries, according to a police spokesperson.

At least one person was injured following a traffic accident involving a bicyclist along Cliff Road in Eagan on Wednesday evening. Eagan police, fire and EMT units responded to the accident, which occurred just after 4:30 p.m. at the intersection of Cliff Road and Cliff Drive in southern Eagan. Police say the bicyclist was riding against traffic along the shoulder of Cliff Road when the individual either struck or was struck by an SUV turning off of Cliff Drive. The bicyclist was transported to Regions Hospital with a broken leg, according to Eagan Police Department Lt. Duane Pike. Police have not yet released the identities of the bicyclist or the driver of the vehicle, Pike said. The accident did not lead to significant traffic delays, …

Thanks for the thoughts, Todd! This is just the most recent in a string of bicycle and car accidents that have been listed in the Eagan police reports. Summer means more cyclists on the road, and I'm sure the recent accidents are a side effect of the season. Thankfully, most of the accidents have been minor.
