Eagan Approves Caribou Coffee Plan for a Drive Thru
The Caribou on Duckwood Drive also has plans to expand outdoor seating.
The Eagan City Council approved earlier this month the drive thru planned for the Caribou Coffee located at 1380 Duckwood Drive.
Representatives from the coffee shop attended the meeting to ask for a conditional use permit for the drive thru and to ask for a variance to reduce the number and width of parking stalls. The plan calls for reducing the number of parking stalls by four.
Caribou also plans to expand the outdoor patio area, according to information in the agenda packet.
The council approved the conditional use permit and variances with a vote of 5-0. As part of the approval, Caribou will need to add painted areas at the rear of the building that designate through traffic and the loading area.
