Eagan Diner Gets New Name and Updated Menu

Silver Bell Diner is located in the Cedar Grove Development area in Eagan.

A diner in Eagan started going by a new name on Wednesday.

Betty's Cafe and Pies is now Silver Bell Diner after a change in ownership left Andrew and Michelle Hybben the sole owners of the restaurant, which opened just over a year ago.

Andrew and Michelle Hybben have been married for 23 years and have three daughters, two of whom work at the restaurant. The family generally eats dinner together and Andrew said that Michelle has always been such a great cook he thought she should open a restaurant.

"We serve home cooked meals," said Andrew to describe the food served at the diner. 

Many of the recipes belong to Michelle, who also makes the pies. Pecan is currently one of the most popular pies. Depending on the season, other favorites include blueberry pie, chocolate covered cherry pie, rhubarb pie and of course, apple pie.

The couple decided to name their restaurant after Silver Bell Road, which has a historical significance that they are happy to have learned about. A long-time Eagan family suggested the name for the road because of a silver bell in their yard, which they used to call in the family for dinner.

The new menu will have some of the same items, but also some ones, such as a drink called a phosphate. The new menu will come out next week.

After a year in business, the Hybbens said that they have enjoyed owning a restaurant in Eagan. 

"Eagan residents are awesome—so friendly and so supportive of us," said Michelle.
